We fill our éclairs with vanilla custard and top them with chocolate ganache icing. The cream puffs we make with either whipped cream or vanilla custard. We do make special flavored fillings during the holidays. Our napoleons are three layers of flaky puffed pastry, filled with bavarian cream, and topped with a vanilla and chocolate glaze.
Whether you call them sfinge or St. Joseph pastries, we make them all year round. We offer a variety of shells and fillings, due to the regional differences of our customers. Cannolis are always a fan favorite. We make our cannoli cream using impastata ricotta, and offer it with or without chocolate chips. If you would like your shell chocolate dipped we can do that for you as well. We also offer mini cannolis.
Don't look for cannolis in our bakery case though. We fill them when you order them in order to offer the freshest product possible.
